Bliss in the Catskills: The Sablewood at Highview Springs
Michelle and Bill wed at The Sablewood in Schoharie, NY. The venue is a magnificently renovated 1870s barn on over 120 acres in the breathtaking northern Catskill Mountains. The soaring 40’ ceilings, elegant gardens, and stunning views brought Michelle and Bill’s wedding dreams to life.

Entrées for the bride and groom
The bride and groom decided on three delicious entrées. Guests had a choice of either filet mignon finished in a merlot & fine herbs demi glaze, chicken sauteed in lemon butter with mushrooms in a white wine sauce, or pacific salmon baked and drizzled with a balsamic glaze and finished with fried leeks.
Savory Elegance
The cocktail hour following the wedding was a culinary delight, offering a delectable assortment of flavors. Mini sliders, perfectly prepared and topped with an array of gourmet ingredients, for those craving a hearty bite. The charcuterie board featured an assortment of fruit, sliced imported italian meats, and artisanal cheeses, offering a sophisticated blend of textures and flavors. Guests also enjoyed shrimp cocktail shooters, stuffed rigatoni with tomato ragu, and teriyaki tenderloin.
A Night to Remember
“I cannot express how grateful we are to the 2Shea Catering Team for their impeccable food, service and professionalism throughout our wedding and the planning process. When my husband and I first toured The Sablewood, my family was concerned that there was no in-house caterer at the venue. The venue owner, Lisa, and Deanna from 2Shea quickly made us feel at ease that this wouldn’t impact the food experience whatsoever. Not only did they prove this to be true, but I can confidently say that the food was the best wedding food my family, my husband and I have ever had! To this day, a year later, we still have guests rave about our wedding food when they see us. From cocktail hour bites and stations to the pretzel station at the end of the night, the food was spectacular. The filet mignon was the absolute star of the show. 2Shea is known for their meats for good reason! We also still have guests ask us what champagne was served because it stands out from the traditional champagne served at weddings.
I would be remiss if I didn’t also talk about 2Shea’s incredible staff. Deanna was phenomenal for the duration of the wedding planning process and was always there to provide helpful tips along the way. From food suggestions to color palette support to helping us figure out logistics of our champagne cart, Deanna helped us come up with creative solutions to make our day memorable. She even helped with bustling my dress the day of the wedding! Jesse from the team was assigned as my husband and my personal attendant on the wedding day, and he was absolutely amazing. He was so professional and attentive in ensuring we were well fed and taken care of the entire night.
Food is such an important aspect of a wedding, and 2Shea honestly exceeded all of my expectations. They are such a well oiled machine and experts in their field. I would choose 2Shea Catering again and again for our caterer. In fact, I wish I had additional events to hire them for just to have an opportunity to work with them and enjoy their delicious food!
